Method
- Preheat your oven to 140°C / 120°C fan / 275°F / Gas Mark 1. This is your warming oven — as each component finishes cooking, it will rest here on a baking tray lined with foil, keeping everything piping hot without drying out.

Place the tomato halves cut-side down in the pan alongside the mushrooms for the final 3 minutes, then cut-side up for 1 minute more. Season and transfer to the oven tray.
- Wipe the pan clean with kitchen paper and return it to a medium heat. Add a small splash of oil and a knob of butter. When the butter foams and subsides, crack in the eggs. Cook sunny-side up for approximately 2–3 minutes for a runny yolk, or cover the pan with a lid for 1 extra minute if you prefer the yolk lightly set. Season with salt and pepper.
- While the eggs cook, toast or warm your soda bread slices and butter them generously.
- Plate everything promptly — arrange the sausages, rashers, puddings, mushrooms, and tomatoes from the oven, add the fried eggs on top, and serve immediately with the buttered soda bread alongside.
