
Double Chocolate Muffins – The Irish Baker Abroad
These muffins taste unreal, they’re really moist, very quick to do and like I say in the video, your kids are gonna absolutely mill them
Recipe
100g | ½ cup of granulated sugar
100g | ½ cup of soft packed brown sugar
3 small eggs or 2 medium
100ml | ⅓ cup + 1tbsp of oil
310ml | 1¼ cup of buttermilk
210g | 1¾ cup of plain flour
65g | ⅔ cup of unsweetened cocoa powder
2 tsp of baking powder
½ tsp baking soda
½ tsp of salt
200g | 1⅓ cups of bittersweet chocolate chips
50g | ⅓ cup of chocolate chips to go o
Buttermilk substitute – Just add about 1.5 tbsps of vinegar or lemon juice to some full milk. Stir and let it stand for about 5-10 minutes
You can also use an ice-cream scoop if you have one. I know for a fact that everyone has a tablespoon so I used that
Bake at 210 C for 5 minutes then lower the heat to 190 C and bake for a further 15 minutes
Fan Oven – 190 C for 5 min. 170 C for 15 min.

Is the measurement of 1-1/4 cups or 310ml of buttermilk? I see that the amount of buttermilk is missing in the recipe. They look delicious, and I want try them!
