
These are referred to as Rock Buns or Rock Cakes. This is a bit of an old school treat that came about back in the day when times were tough and rations were limited.It’s simple enough to do and it tastes great so have a whack at it and let me know how you get on! If you’re not keen on the fruit you can replace it with 150g of milk or dark chocolate chips. Delish!

Recipe
250g | 2 cups of plain flour
2 tsp baking powder
Pinch of salt
100g | 1 stick of butter
75g | 1/3 cup of sugar
1/2 tsp of mixed spice or cinnamon (optional)
150g | 1 cup mix of sultanas and raisins
50ml | 1/4 cup of buttermilk or regular milk
1 large egg
Method
Sieve the flour and salt in a bowl. Add the butter and rub in with your fingertips until it resembles fine breadcrumbs. Mix in the remaining dry ingredients with your hands.
Beat the egg with the milk. Make a well in the center of the bowl and add the liquid. Combine with a spoon or your hand until it all comes together. This dough is not as wet as a scone dough. It should still be a bit sticky to the touch though
Using a fork or a spoon, scoop out and divide the dough in to 8-10 rough portions that somewhat resemble a rock shape and place on a baking tray lined with greaseproof paper. Sprinkle the tops with granulated sugar
Bake at 200C / 392 for about 15 minutes or until golden brown
Fan oven – 180C / 356
