Smoked Mackerel Pâté Recipe: A Taste of the Irish Atlantic Coast

Few ingredients speak to Ireland’s relationship with the sea quite as eloquently as the Atlantic mackerel. Caught in abundance off the west and south coasts — from Donegal Bay down through Connemara and around the rugged shores of Cork and Kerry — mackerel has fed Irish coastal communities for centuries. Historically, it was a fish of the people: affordable, plentiful, and deeply nutritious. Fishermen would smoke their surplus catch over smouldering wood to preserve it through leaner days, and that tradition of hot-smoking mackerel has endured beautifully into the modern Irish kitchen.

Smoked Mackerel Pâté is one of those wonderfully unfussy dishes that has become a staple of Irish hospitality — appearing on the menus of country house hotels, seaside gastropubs, and family kitchen tables alike. It bridges the old and the new with ease: the smoky, robust depth of traditionally cured fish softened into something silky and refined by the addition of cream cheese and a good squeeze of bright Atlantic lemon. It is the kind of starter that feels generous and convivial without demanding hours of effort, which perhaps explains its enduring place in Irish hearts.

The very best versions are made with whole hot-smoked mackerel fillets — the sort you’ll find at any good fishmonger, at farmers’ markets in Galway, Dingle, or Cobh, or sometimes still from the smokehouses themselves along the Wild Atlantic Way. If you can source locally smoked fish, do — the flavour is incomparably richer and more complex than anything that travels far. Served with thick slices of brown soda bread and a wedge of lemon, this pâté is Irish coastal cooking at its most honest and satisfying.

Ingredients

  • 250g (9oz) hot-smoked mackerel fillets, skin removed
  • 200g (7oz) full-fat cream cheese, at room temperature
  • 2 tbsp (30ml) crème fraîche
  • 1½ tbsp (22ml) fresh lemon juice, plus extra to taste
  • 1 tsp finely grated lemon zest
  • 1 tsp hot horseradish sauce (or freshly grated horseradish to taste)
  • 1 tbsp fresh flat-leaf parsley, finely chopped
  • Freshly ground black pepper, to taste
  • A pinch of cayenne pepper (optional)
  • To serve: Irish brown soda bread, lemon wedges, and a few sprigs of dill or watercress

  1. Begin by preparing your mackerel. Run your fingers carefully over each fillet to check for any remaining pin bones, removing them as you go. Break the flesh into rough chunks and place in a mixing bowl or the bowl of a food processor.
  2. Add the cream cheese, crème fraîche, lemon juice, lemon zest, and horseradish sauce to the mackerel.
  3. If using a food processor, pulse the mixture in short bursts — four or five pulses — until you reach a texture you’re happy with. For a smoother, more refined pâté, process for a little longer. For something with a little more rustic character and visible flakes of fish, keep it brief. Alternatively, mix everything together by hand with a fork, mashing as you go, for a chunkier finish.
  4. Fold in the chopped flat-leaf parsley, then season generously with freshly ground black pepper. Taste before adding any salt — the smoked mackerel is already well-seasoned and will likely need none. Add a pinch of cayenne if you like a gentle warmth.
  5. Taste the pâté again and adjust with a little more lemon juice or horseradish as needed. The lemon should be bright and present without overpowering the smoke.
  6. Spoon the pâté into a serving bowl or individual ramekins. Smooth the tops with the back of a spoon. Cover with cling film and refrigerate for at least 30 minutes — this rest allows the flavours to mellow and meld beautifully.
  7. Remove from the fridge about 10 minutes before serving to take the chill off. Serve with generously sliced brown soda bread, lemon wedges on the side, and a garnish of fresh dill or watercress.

Tips

  • Choose quality fish: The better your smoked mackerel, the better your pâté. Look for fillets that are glossy, firm, and deeply golden — a dull or overly dry fillet will produce a flat-tasting result.
  • Make ahead: This pâté keeps well in the fridge for up to three days, tightly covered. The flavour actually improves overnight as everything comes together.
  • Room temperature cream cheese: Taking your cream cheese out of the fridge 20–30 minutes before you begin means it blends far more smoothly with no lumps.
  • Balance is everything: Smoked mackerel is bold, so don’t be shy with the lemon — it does essential work in cutting through the richness of the fish and cheese.
  • Serving suggestion: A small pile of peppery watercress alongside adds colour and a pleasant bite that complements the smoky, creamy pâté beautifully.

There is something deeply comforting about a dish this simple done this well — the kind of food that asks nothing complicated of you and gives back so much in return. Whether you’re sitting by an open fire in a Connemara cottage or bringing a taste of Ireland’s Atlantic coast to your own table wherever you are in the world, this Smoked Mackerel Pâté is a reminder that the finest Irish food has always been rooted in honest ingredients, treated with care and a little love.
