Treacle Bread Recipe: The Dark, Sweet Soda Bread That Warms Every Irish Kitchen

There is a moment, somewhere between the oven door closing and the kettle boiling, when the smell of treacle bread begins to move through an Irish house like a rumour of something wonderful. It is caramel-dark and faintly smoky, with that unmistakable tang of buttermilk threading underneath — and it is one of the most honest, comforting smells in Irish domestic life. Treacle bread is a variation on the great tradition of Irish soda bread, leavened not with yeast but with the simple chemistry of bicarbonate of soda meeting acidic buttermilk, producing a loaf that can be on the table within the hour.

Black treacle has been a kitchen staple on the island since the nineteenth century, when it arrived as an affordable sweetener and quickly found its way into breads, cakes, and puddings. Unlike the refined sweetness of sugar, treacle carries depth: a bittersweet, almost molasses-like warmth that transforms a plain soda loaf into something altogether richer and more complex. In rural farmhouse kitchens, where baking happened daily and nothing was wasted, treacle bread became a way of making the everyday feel just a little bit special. A thick slice spread with salted butter alongside a mug of strong tea remains, to this day, one of the great Irish pleasures.

The recipe below is as traditional as it gets — wholemeal flour for earthiness, a generous spoonful of treacle for that characteristic dark colour and bittersweet depth, and good buttermilk to bring it all together. It requires no proving time, no kneading to speak of, and no specialist equipment. What it requires is a light hand and the confidence to leave it alone once it goes into the oven.

Ingredients

  • 225g (8 oz) plain white flour, plus extra for dusting
  • 225g (8 oz) wholemeal flour
  • 1 tsp bicarbonate of soda
  • 1 tsp fine salt
  • 1 tbsp soft dark brown sugar
  • 2 tbsp (approx. 40g / 1.5 oz) black treacle
  • 350–375ml (12–13 fl oz) buttermilk, plus a little extra if needed
  • 15g (½ oz) unsalted butter, cold and cubed (optional, for a slightly softer crumb)

  1. Preheat your oven to 200°C / 180°C fan / 400°F / Gas Mark 6. Lightly flour a baking tray or line it with baking parchment.
  2. In a large mixing bowl, combine both flours, the bicarbonate of soda, salt, and brown sugar. Whisk briefly with a fork to distribute the raising agent evenly — this is important, as any pockets of bicarb will taste unpleasant in the finished loaf.
  3. If using butter, rub it into the flour mixture with your fingertips until it resembles coarse breadcrumbs. This step is optional but gives a slightly more tender texture.
  4. Measure the treacle into a jug, then pour in most of the buttermilk and stir to combine. The treacle will not dissolve completely at first — that is perfectly fine.
  5. Make a well in the centre of the dry ingredients and pour in the treacle-buttermilk mixture. Using one hand or a table knife, bring the dough together with a quick, light action. It should be soft and slightly sticky but holding its shape. Add the remaining buttermilk a splash at a time if the dough feels dry.
  6. Turn the dough out onto a lightly floured surface and shape it gently into a round about 5–6cm (2 inches) deep. Do not knead — simply pat it into shape. Overworking the dough will toughen it.
  7. Place the round on the prepared tray and cut a deep cross into the top with a sharp knife, scoring almost all the way through. This allows the heat to reach the centre and is the traditional mark of Irish soda bread.
  8. Bake for 35–40 minutes, until the loaf has risen, the crust is firm, and the base sounds hollow when tapped. If the top is browning too quickly, lay a sheet of foil loosely over it for the final ten minutes.
  9. Transfer to a wire rack and allow to cool for at least 20–30 minutes before slicing. Cutting too soon will give a doughy interior, as the crumb continues to set as it cools.

Tips

  • If you cannot find buttermilk, make your own by stirring 1 tablespoon of lemon juice or white wine vinegar into 375ml of whole milk and leaving it for five minutes until slightly thickened.
  • The treacle is easier to measure if you warm the spoon briefly in hot water first — it slides off cleanly and you lose less to the sides of the jug.
  • Treacle bread is best on the day it is made, but it toasts beautifully the following day and keeps well wrapped in a clean tea towel for up to two days.
  • For a slightly lighter loaf, swap up to half the wholemeal flour for additional plain white flour.
  • This bread pairs extraordinarily well with a mature farmhouse Cheddar, smoked salmon, or simply an indecent amount of good salted butter. If you’d like another dark, malty loaf from the same family, try our Guinness Brown Bread — and if it’s the treacle flavour itself you’re after in a lighter, handheld form, our Traditional Treacle Scones are well worth a bake.

There is something quietly magical about a loaf of treacle bread — the way such simple, storecupboard ingredients can produce something so richly flavoured, so deeply Irish, and so completely satisfying. Whether you make it on a grey winter afternoon or a bright summer morning, it has a way of making wherever you are feel a little more like home. We hope it brings the same warmth to your kitchen that it has brought to Irish kitchens for generations.
