What’s your Irish county’s signature dish? ☘️

Different counties claim different dishes — Your County’s Signature Food tells you which one your county is known for, with a short story behind it.

Few things speak of Ireland’s wild, elemental landscape quite like Connemara lamb. Raised on the rugged hillsides of County Galway’s Connemara, where the Atlantic wind rolls in across bog and moorland, these small, hardy mountain sheep graze on a remarkable natural larder — sweet mountain grasses, wild heather, clover, and herbs that grow between the rocks and peat. It is this extraordinary diet, combined with the clean salt air and the constant exercise of ranging across steep terrain, that gives Connemara hill lamb its famously deep, complex flavour: richer and more distinctly gamey than lowland lamb, with a sweetness that is entirely its own. It is, without question, some of the finest lamb you will find anywhere in the world. Connemara Hill Lamb was the first Irish meat product to earn EU Protected Geographical Indication (PGI) status, back in 1999 — official recognition of just how closely its flavour is tied to this one corner of Ireland.

The tradition of eating lamb in Connemara stretches back centuries, woven into the fabric of life on the western seaboard. For generations of farming families in this part of Connacht, the sheep were central to survival — providing wool, milk, and meat through long, hard winters. Lamb cutlets were a celebratory cut, saved for feast days, returned emigrants, or the priest’s visit, cooked simply over an open fire or in a heavy iron pan because the meat itself needed very little embellishment. That philosophy of simplicity remains at the heart of this dish today. Mint sauce — sharp, herby, faintly sweet — has long been the traditional Irish companion to lamb, and the pairing is one of those perfect culinary marriages that no amount of modern reinvention has managed to improve upon.

This recipe keeps faith with tradition. You are not masking the lamb; you are framing it. Good Connemara lamb cutlets — or the finest hill lamb cutlets you can source from a trusted butcher — need only a hot pan, a little seasoning, and that bright, vivid mint sauce made from scratch. It takes very little time and produces something genuinely special: a plate that tastes, unmistakably, of Ireland.

Ingredients

  • 8 lamb cutlets (approximately 100–120 g / 3½–4 oz each), French-trimmed if preferred
  • 2 tablespoons rapeseed oil or olive oil
  • 1 teaspoon flaky sea salt
  • ½ teaspoon freshly ground black pepper
  • 2 cloves garlic, halved (for rubbing the pan)
  • For the mint sauce:
  • Large bunch of fresh mint (approximately 30 g / 1 oz leaves, picked and finely chopped)
  • 1 tablespoon caster sugar
  • 3 tablespoons white wine vinegar or cider vinegar
  • 2 tablespoons boiling water
  • Pinch of fine salt

Method

  1. Begin with the mint sauce, as it benefits from resting for at least 20–30 minutes before serving. Place the finely chopped fresh mint into a small bowl or jug. Dissolve the caster sugar and pinch of salt in the boiling water, then stir into the mint. Add the vinegar, stir well, and taste — adjust the balance of sugar and vinegar to your preference. Set aside at room temperature to allow the flavours to meld.
  2. Remove the lamb cutlets from the refrigerator at least 30 minutes before cooking and allow them to come to room temperature. Pat them thoroughly dry with kitchen paper — this is essential for a good sear.
  3. Season the cutlets generously on both sides with the flaky sea salt and freshly ground black pepper, pressing the seasoning gently into the meat.
  4. Place a large, heavy-bottomed frying pan or cast-iron skillet over a high heat and allow it to become very hot — a drop of water should evaporate immediately on contact. Add the oil and swirl to coat.
  5. Rub the cut sides of the garlic halves around the hot pan, then discard them. Lay the cutlets into the pan in a single layer, working in two batches if necessary to avoid crowding.
  6. Cook the cutlets for 3–4 minutes on the first side without moving them, until a deep, golden-brown crust has formed. Flip and cook for a further 2–3 minutes on the second side for pink, medium lamb, or 4 minutes for medium-well. Connemara lamb is best served still slightly pink at the centre to preserve its flavour and tenderness.
  7. Stand the cutlets on their fatty edge for the final 1 minute of cooking to render and crisp the fat.
  8. Remove the cutlets to a warm plate, tent loosely with foil, and rest for 5 minutes before serving. Serve with the mint sauce alongside, and accompany with champ, colcannon, or simply boiled new potatoes and a green vegetable.

Tips

  • Source the best lamb you can find — if genuine Connemara hill lamb is available from a specialist Irish butcher or farmers’ market, it is absolutely worth seeking out.
  • Do not skip the resting step; it allows the juices to redistribute through the meat and makes a significant difference to the finished texture.
  • Fresh mint sauce must be made with fresh mint — dried mint will not give the same bright, clean flavour that makes this sauce so distinctive.
  • If your cutlets have a thick cap of fat, score it lightly with a sharp knife before cooking to help it render evenly and prevent the meat from curling in the pan.
  • A cast-iron pan gives the finest crust, but any heavy-based pan that holds heat well will produce excellent results.

There is something quietly profound about a dish this simple done this well — the sizzle of good lamb in a hot pan, the sharp green fragrance of fresh mint, the knowledge that people have been cooking and eating in this same unhurried way along the Connemara coast for generations. It is a recipe that asks you to slow down, to trust the quality of what you have, and to let the landscape of the west of Ireland speak for itself on the plate. We hope it brings a little of that wild, beautiful place to your table, wherever in the world you happen to be cooking tonight.
