Method

  1. Heat a large heavy-based pot over medium heat. Brown the lamb chunks in batches, ensuring they get a nice colour on all sides. Remove and set aside.
  2. Add the sliced onions to the pot and cook gently until softened, about 5 minutes.
  3. Return the lamb to the pot along with the carrots, potatoes, stock, thyme, and bay leaves.
  4. Bring to a gentle simmer, cover, and cook on low heat for about 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
  5. Season with salt and freshly ground black pepper to taste. Remove the thyme sprigs and bay leaves before serving.
  6. Serve hot with a side of traditional Irish soda bread or Irish soda scones for a complete meal.
