- Bring to a gentle simmer, cover, and cook on low heat for about 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
- Season with salt and freshly ground black pepper to taste. Remove the thyme sprigs and bay leaves before serving.
