Irish Potato Bread Recipe

Ingredient Quantity
Cooked and mashed potatoes 450g (about 3 medium potatoes)
Plain flour 225g (about 1 ½ cups)
Baking powder 1 tsp
Salt ½ tsp
Buttermilk 120ml (about ½ cup)
Butter (optional, for cooking) As needed

  1. In a large bowl, combine the mashed potatoes, plain flour, baking powder, and salt. Mix well to combine.
  2. Add the buttermilk gradually, mixing until a soft dough forms. You may need slightly more or less buttermilk depending on the moisture in your potatoes.
  3. Turn the dough onto a floured surface and knead gently for 1-2 minutes until smooth. Avoid over-kneading to keep the bread light.
  4. Divide the dough into two equal portions and shape each into a round flatbread about 1.5cm thick.
  5. Heat a heavy-based frying pan or griddle over medium heat. Add a little butter if desired.
  6. Cook each bread for 6-8 minutes on each side or until golden brown and cooked through. Adjust heat as necessary to prevent burning.
  7. Remove from the pan and allow to cool slightly before slicing.

Storage

Irish potato bread is best enjoyed fresh on the day it is made. However, you can store leftovers in an airtight container at room temperature for up to 2 days. To refresh, warm gently in a pan or oven before serving.

Freezing

You can freeze cooked Irish potato bread by wrapping it tightly in cling film and placing it in a freezer bag. Freeze for up to 1 month. Thaw at room temperature and reheat in a pan or oven.

Troubleshooting

  • Dough too sticky: Add a little extra flour, a tablespoon at a time, until manageable.
  • Dough too dry: Add a splash more buttermilk or milk to loosen.
  • Bread not cooked through: Lower the heat and cook for longer to avoid burning the outside while the centre remains raw.
