- In a large bowl, combine the mashed potatoes, plain flour, baking powder, and salt. Mix well to combine.
- Add the buttermilk gradually, mixing until a soft dough forms. You may need slightly more or less buttermilk depending on the moisture in your potatoes.
- Turn the dough onto a floured surface and knead gently for 1-2 minutes until smooth. Avoid over-kneading to keep the bread light.
- Divide the dough into two equal portions and shape each into a round flatbread about 1.5cm thick.
- Heat a heavy-based frying pan or griddle over medium heat. Add a little butter if desired.
