
Brazilian Banana Cake – The Irish Baker Abroad
Simple, moist and delicious. Don’t throw your overripe Bananas away. Give them a second chance!

Recipe
3 large overripe Bananas
4 medium Eggs
200ml of Oil
220g of Sugar
1/2 tsp Salt
1 tsp Vanilla essence
180ml of Milk
170g of Plain Flour
1 tbsp Baking Powder
Brazilian Banana Cake
Method
Start off by preparing the bananas. Slice them in half then in to 3 strips length ways. Set aside
In a large bowl, lightly whisk the eggs, sugar, oil, salt, vanilla essence and milk until combined. Sieve in the flour and baking powder and mix to a nice smooth batter.
Pour the batter in to a 20 x 30cm cake tin greased with butter and dusted with flour
Place the strips of banana on top. Sprinkle with sugar and cinnamon then bake in an oven preheated to 180C/356F for about 35 minutes. Check with a skewer or a sharp knife to see if it’s done and if not give it a few more minutes
If using a fan oven bake at 160C/320F
