
Chris’s Irish Tea Brack
Some also refer to this as Barmbrack, Bairín Breac or Tea Cake. There are a few versions of it containing mixed peel, glaced cherries, lemon juice and other delights. There’s also a yeasted Barmbrack which is common at Halloween. I’ll cover that later this year
Chris’s Irish Tea Brack
300g Mixed dried fruit
200ml of Cold Tea
100ml of Guinness
A Drop of Whiskey(2-3 tbsp)
1 Large Egg
75g Dark Brown Sugar
240g of Plain Flour
2tsp of Baking Powder
2tsp of Mixed Spice

Soak the dried fruit in a bowl with the Tea and Guinness overnight
The following day add a lightly beaten egg and the dark brown sugar to the soaked fruit. Mix with a wooden spoon. Sieve in the dry ingredients and combine well
Transfer the mix to a 2lb/900g loaf tin greased with butter or lined with parchment paper and bake for 50 minutes at 180C/356F Conventional Oven
The Guinness and Whiskey are optional. Just go with 300ml/1 ¼ cup of Tea instead if you prefer that
This recipe is converted from grams so these are approximate US Cup Measurements
1 ½ cups Mixed dried fruit
¾ cup + 1tbsp of Cold Tea
⅓ cup + 1tbsp of Guinness

2 cups of All purpose Flour
2tsp of Baking Powder
2tsp of Mixed Spice
