Classic Irish Shepherd’s Pie Recipe

| Minced lamb | 500g | 1 lb |
| Onion, finely chopped | 1 medium | 1 medium |
| Carrots, diced | 2 medium | 2 medium |
| Peas | 100g | 3.5 oz |
| Garlic cloves, minced | 2 | 2 |
| Beef or lamb stock | 250ml | 1 cup |
| Tomato purée | 1 tbsp | 1 tbsp |
| Worcestershire sauce | 1 tbsp | 1 tbsp |
| Potatoes, peeled and chopped | 900g | 2 lb |
| Butter | 50g | 3.5 tbsp |
| Milk | 100ml | 3.5 fl oz |
| Salt and pepper | to taste | to taste |
Method
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash with butter and milk until smooth. Season with salt and pepper.
- In a large pan, sauté the onion, carrots, and garlic until softened.
- Add the minced lamb and cook until browned.
- Stir in the tomato purée, Worcestershire sauce, and stock. Simmer for 15 minutes until the mixture thickens slightly.
- Add the peas and cook for a further 5 minutes.
- Transfer the meat mixture to a baking dish and spread the mashed potatoes evenly on top.
- Bake in a preheated oven at 200°C (400°F) for 20-25 minutes until the top is golden and crisp.
- Allow to rest for a few minutes before serving.

No!!! I climbed up with every intention of kissing the Blarney Stone, but when I looked at those wee bars that you had to lie backwards on, I just KNEW that this would be the time that they finally decided to break! And it is a LONG way down!!!
