Irish Wheaten Bread Recipe

Serves: 1 loaf (8–10 slices)

Prep Time: 10 minutes

Cook Time: 35–40 minutes

Ingredients

Ingredient Metric Imperial / Cups
Wholemeal flour 300g 2½ cups
Plain white flour 100g ¾ cup
Bicarbonate of soda 1 tsp 1 tsp
Salt ½ tsp ½ tsp
Caster sugar 1 tbsp 1 tbsp
Butter, cold and cubed 30g 2 tbsp
Buttermilk 350ml 1½ cups
Egg 1 large 1 large

Method

  1. Preheat the oven to 200°C (fan 180°C / gas mark 6 / 392°F). Lightly grease a 900g (2lb) loaf tin or line it with baking parchment.
  2. In a large bowl, combine the wholemeal flour, plain flour, bicarbonate of soda, salt, and sugar. Whisk together to distribute the raising agent evenly.
  3. Add the cold cubed butter and rub it into the flour mixture with your fingertips until it resembles fine breadcrumbs.
  4. In a jug, whisk together the buttermilk and egg.
  5. Make a well in the centre of the dry ingredients and pour in the buttermilk mixture. Stir gently with a wooden spoon or spatula until just combined — do not overwork the dough.
