Irish Whiskey Cake Recipe: A Dense, Boozy Celebration of Irish Baking

There are few things more comforting than the smell of a whiskey-soaked cake coming out of a warm Irish kitchen. Irish Whiskey Cake has long held a special place on the island, appearing at wakes and weddings, on Christmas tables and at Sunday gatherings where tea alone simply wouldn’t do. It belongs to a tradition of Irish baking that prizes richness and keeping quality over fuss — a cake that actually improves with a day or two’s rest, wrapped quietly in a drawer while the whiskey works its way through every crumb.

Like so many beloved Irish recipes, this one doesn’t have a single definitive origin. It evolved from the older tradition of porter cakes and fruit-laden Christmas loaves, where alcohol was used partly for flavour and partly as a preservative in the days before refrigeration. Whiskey was the natural local choice — plentiful, warming, and deeply woven into Irish domestic life. Over generations, home bakers simplified and refined the recipe, dropping much of the dried fruit and leaning into the butter-and-whiskey combination that gives the finished cake its signature dense, moist crumb and that unmistakable golden warmth.

This is not a delicate, airy sponge. Irish Whiskey Cake is a proper, sturdy thing — dark gold in colour, faintly sticky on top from its whiskey syrup soak, and rich enough that a modest slice alongside a strong cup of tea is genuinely satisfying. It keeps beautifully for up to five days in a tin, and many people will tell you in all seriousness that it is at its absolute best on day three.

Ingredients

  • 225g (8oz) plain flour
  • 1 tsp baking powder
  • ½ tsp fine salt
  • 175g (6oz) unsalted butter, softened
  • 175g (6oz) caster sugar
  • 3 large eggs, at room temperature
  • 100ml (3½ fl oz) Irish whiskey (a blended Irish whiskey works well)
  • 100ml (3½ fl oz) whole milk
  • 1 tsp vanilla extract
  • 75g (2¾oz) walnut halves, roughly chopped (optional but traditional)
  • For the whiskey syrup:
  • 75g (2¾oz) caster sugar
  • 60ml (2 fl oz) water
  • 60ml (2 fl oz) Irish whiskey

Method

  1. Preheat your oven to 170°C (150°C fan) / 325°F / Gas Mark 3. Grease and line a deep 20cm (8-inch) round cake tin with baking parchment.
  2. Sift the flour, baking powder, and salt together into a bowl and set aside.
  3. In a large mixing bowl, beat the softened butter and caster sugar together until pale and fluffy — this will take a good 4 to 5 minutes with an electric hand mixer, or a little longer by hand. Don’t rush this stage; it gives the cake its lift.
  4. Add the eggs one at a time, beating well after each addition. If the mixture looks as though it is beginning to curdle, add a tablespoon of your flour mixture and continue beating.
  5. Stir in the vanilla extract.
  6. Combine the whiskey and milk in a small jug. Add the flour mixture to the butter mixture in three additions, alternating with the whiskey-milk mixture, beginning and ending with flour. Fold gently with a large spoon or spatula — do not overwork the batter.
  7. Fold in the chopped walnuts, if using.
  8. Spoon the batter into the prepared tin, level the top, and bake in the centre of the oven for 50 to 60 minutes, until a skewer inserted into the middle comes out clean and the cake is a deep golden brown. If the top is colouring too quickly, lay a sheet of foil loosely over it after 40 minutes.
  9. While the cake bakes, make the syrup. Place the sugar and water in a small saucepan and stir over a low heat until the sugar has dissolved completely. Bring to a gentle simmer for 2 minutes, then remove from the heat and stir in the whiskey. Allow to cool slightly.
  10. When the cake comes out of the oven, leave it in its tin. Use a skewer to poke 20 to 30 small holes across the surface, then slowly spoon the warm whiskey syrup over the top, allowing it to sink in gradually. Leave the cake in the tin until completely cool before removing.

Tips

  • All ingredients at room temperature before you begin will give a smoother, better-risen batter.
  • A good blended Irish whiskey — nothing too peaty or heavily aged — gives the best flavour here without overpowering the cake.
  • Wrap the completely cooled cake tightly in cling film or store in a tin; it genuinely improves over 24 to 48 hours as the syrup distributes evenly through the crumb.
  • For a slightly more indulgent finish, dust lightly with icing sugar before serving, or offer a spoonful of lightly whipped cream alongside.
  • The walnuts can be left out entirely for a nut-free version — the cake is just as good without them.
