Lamb or beef, cut into chunks 1 kg 2.2 lbs
Potatoes, peeled and chopped 1 kg 2.2 lbs
Carrots, sliced 3 medium 3 medium
Onions, diced 2 medium 2 medium
Parsnip (optional) 1 medium 1 medium
Beef or lamb stock 1 litre 4 cups
Fresh thyme A handful A handful
Salt & pepper To taste To taste
Flour (optional, for thickening) As needed As needed

👨‍🍳 How to Make It:

1️⃣ Brown the Meat

  • Heat a large pot over medium heat and sear the meat until browned.
  • Remove and set aside.

2️⃣ Sauté the Veggies

  • In the same pot, sauté onions, carrots, and parsnips for a few minutes.
  • Return the meat to the pot.

3️⃣ Add Potatoes & Stock

  • Toss in the potatoes and pour in the stock until everything is covered.
  • Add thyme, salt, and pepper.

4️⃣ Let It Simmer

  • Cover and simmer on low for 1.5 – 2 hours, stirring occasionally.
  • If needed, add a little flour to thicken.

5️⃣ Serve & Enjoy!
