Bubbling away in a deep earthenware dish, its golden mashed-potato crown hiding a richly savoury lamb filling beneath — it is the sort of meal that has warmed Irish kitchens for generations. The origins of Shepherd’s Pie stretch back to the late eighteenth century, when the introduction of the potato to everyday Irish and British cooking coincided with a practical need to stretch leftover roast lamb into another meal entirely. The name itself is telling: it is shepherd’s pie because it is made with lamb or mutton — the animals a shepherd would tend. Cottage pie, its close cousin, uses beef. In Ireland, where sheep farming has long been woven into the fabric of rural life — from the limestone hills of Connemara to the green slopes of Kerry — lamb was a natural and plentiful choice, and the dish took deep root in the country’s culinary tradition.

Today, Shepherd’s Pie remains a beloved fixture in Irish households, served on weeknights and Sundays alike, often made from scratch rather than from leftovers. It is the kind of food that grandmothers made without a written recipe, measuring by feel and habit, and that carries with it a quiet, unhurried sense of home. Here is how to make it the traditional way — properly, patiently, and well.

Ingredients

  • For the filling:
  • 700g (1½ lb) minced lamb
  • 1 large onion, finely diced
  • 2 medium carrots, finely diced
  • 2 sticks of celery, finely diced
  • 2 cloves of garlic, minced
  • 2 tablespoons tomato purée
  • 1 tablespoon Worcestershire sauce
  • 200ml (7 fl oz) lamb or beef stock
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried)
  • 1 teaspoon fresh rosemary, finely chopped
  • Salt and freshly ground black pepper
  • 1 tablespoon plain flour
  • 1 tablespoon sunflower or vegetable oil
  • For the mashed potato topping:
  • 1kg (2¼ lb) floury potatoes, such as Rooster or Maris Piper, peeled and quartered
  • 60g (2 oz) butter
  • 100ml (3½ fl oz) warm whole milk
  • Salt and white pepper to taste
  • A little extra butter for dotting on top

Method

  1. Preheat your oven to 190°C (375°F / Gas Mark 5).
  2. Heat the oil in a large, heavy-based frying pan over a medium-high heat. Add the minced lamb and brown it thoroughly, breaking it up with a wooden spoon as you go. This should take around 8–10 minutes. Season well with salt and pepper. Once browned, spoon off any excess fat, leaving just a thin layer in the pan.
  3. Reduce the heat to medium. Add the diced onion, carrot, and celery to the pan and cook gently for 6–8 minutes until softened. Add the garlic and cook for a further minute.
  4. Stir in the flour and cook for 1–2 minutes to remove the raw taste. Add the tomato purée, Worcestershire sauce, thyme, and rosemary, stirring everything together well.
  5. Pour in the stock and stir to combine. Bring to a gentle simmer and cook uncovered for 20–25 minutes, stirring occasionally, until the filling has thickened and the liquid has reduced. It should be moist but not watery. Taste and adjust the seasoning.
  6. Meanwhile, cook the potatoes in a large pan of well-salted boiling water for 18–20 minutes until completely tender when pierced with a knife. Drain thoroughly and leave to steam-dry in the colander for two to three minutes — this ensures a fluffier mash.
  7. Return the potatoes to the warm pan. Add the butter and mash until smooth, then stir in the warm milk gradually until you have a creamy, spreadable mash. Season well with salt and white pepper.
  8. Spoon the lamb filling into a large ovenproof dish (approximately 28 x 22cm / 11 x 9 inches). Spread the mashed potato evenly over the top, right to the edges to seal in the filling. Use a fork to rough up the surface — this helps it catch and brown in the oven.
  9. Dot the surface with small pieces of butter. Place on the middle shelf of the preheated oven and bake for 25–30 minutes until the top is golden and the filling is bubbling up around the edges.
  10. Remove from the oven and allow to rest for five minutes before serving.

Tips

  • Floury potato varieties are essential here — waxy potatoes will give you a gluey, dense topping rather than a light, fluffy one.
  • Do not rush the browning of the lamb. Good colour at this stage means deep, developed flavour in the finished dish.
  • The filling must not be too wet before it goes into the dish — if it looks loose, continue simmering until it tightens. A soupy filling will make the mash sink.
  • Shepherd’s Pie reheats beautifully the next day, and many cooks find the flavours actually improve overnight.
  • If you want a particularly golden, crisp top, place the dish under a hot grill for the final three to four minutes of cooking — watch it carefully.
