Spaghetti Carbonara Pie Recipe

| Spaghetti | 200g | 7 oz (about 7/8 cup) |
| Pancetta | 100g | 3.5 oz |
| Pecorino cheese, grated | 50g | 1/2 cup |
| Eggs | 3 large | 3 large |

Method:
- Cook the spaghetti in salted boiling water until al dente. Drain and set aside.
- Fry the pancetta until crisp. Remove from heat and let cool slightly.
- In a bowl, whisk the eggs with the grated pecorino cheese and black pepper.
- Toss the cooked spaghetti with the pancetta and then add the egg mixture, stirring quickly to coat the pasta without scrambling the eggs.
- Transfer the mixture into a greased pie dish and bake in a preheated oven at 180°C (350°F) for about 20 minutes or until set and golden on top.
- Allow to cool slightly before slicing and serving.

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave to maintain the texture and flavour.
