Recipe: Perfect Irish Soda Bread
Ingredients:
| Ingredient | Metric | Imperial / Cups |

| Plain white flour | 250g | 2 cups |
| Plain wholemeal flour | 250g | 2 cups |
| Porridge oats | 100g | 1 cup |
| Bicarbonate of soda | 1 tsp | 1 tsp |
| Salt | 1 tsp | 1 tsp |
| Butter, cut in pieces | 25g | 2 tbsp |
| Buttermilk | 500ml | 2 cups |
Method:
- Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
- Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn’t ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
- Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices – or simply slice across. Eat very fresh.
How to Store Perfect Irish Soda Bread
To keep your soda bread fresh, store it in a paper bag or wrapped in a clean tea towel at room temperature for up to two days. Avoid plastic bags as they can make the crust soggy. For longer storage, see the freezing advice below.
Can You Freeze Perfect Irish Soda Bread?
Yes, you can freeze Irish soda bread. Wrap it tightly in cling film and then place it in a freezer bag. It will keep well for up to three months. When ready to eat, thaw at room temperature and refresh in a warm oven for a few minutes to restore the crust.
Why Is My Irish Soda Bread Too Dense?
Irish soda bread should be light and tender, not heavy. If your bread turns out dense, it may be because the bicarbonate of soda was not fresh or the dough was overworked. Handle the dough gently and ensure your baking soda is within its expiry date for best results.
