
If you’re celebrating St. Patrick’s Day then you MUST try my Irish Guinness soda bread recipe. It’s made without yeast and part Guinness, part buttermilk – From Warren Nash
Ingredients (Serves 8-10 | Prep time: 15m | Cooking time: 30m | 169 calories & 2.7g fat p/serving):

| Plain white flour | 190g | 1 1/2 cups |
| Wholemeal flour | 190g | 1 1/2 cups |
| Bicarbonate of soda | 1 tsp | 1 tsp |
| Buttermilk | 150ml | 2/3 cup |
| Guinness | 100ml | 3.5 fl oz |
| Salt | Pinch | Pinch |
| Butter | 25g | 2 tbsp |
| Treacle | 2 tbsp | 2 tbsp |
| Porridge oats (for sprinkling) | As needed | As needed |
Method
1. Preheat your oven to 200°C (fan 180°C, gas mark 6). Line a baking tray with parchment paper.
2. In a large bowl, sift together the plain white flour, wholemeal flour, bicarbonate of soda, and salt.
3. Rub in the butter until the mixture resembles fine breadcrumbs.
4. Stir in the treacle.
5. Make a well in the centre and pour in the buttermilk and Guinness. Mix gently with a wooden spoon until the dough just comes together. Do not overmix.
6. Turn the dough out onto a floured surface and shape into a round loaf about 20cm in diameter.
7. Place the loaf on the prepared baking tray. Score a deep cross on the top with a sharp knife and sprinkle with porridge oats.
8. Bake in the preheated oven for 30 minutes or until the bread sounds hollow when tapped on the base.
9. Remove from the oven and cool on a wire rack before slicing.

Yes, you can freeze this soda bread. Allow it to cool completely, then wrap tightly in cling film and place in a freezer bag. Freeze for up to 3 months. To defrost, leave at room temperature or warm gently in the oven.

Overmixing the dough can develop gluten and make the bread dense. Mix just until ingredients come together. Also, ensure your bicarbonate of soda is fresh for proper rising.
