Irish Soda Bread with Raisins Recipe

Self-raising flour 450 g 3 1/2 cups
Baking soda 1 tsp 1 tsp
Salt 1 tsp 1 tsp
Buttermilk 350 ml 1 1/2 cups
Raisins 100 g 3/4 cup
Butter (optional, for serving) As desired As desired

Method

  1. Preheat your oven to 200°C (180°C fan) / 400°F / Gas Mark 6.
  2. In a large bowl, sift together the self-raising flour, baking soda, and salt.
  3. Stir in the raisins to distribute evenly.
  4. Make a well in the centre and gradually add the buttermilk, mixing gently with a wooden spoon or your hands until a soft dough forms. Avoid over-mixing to keep the bread light.
  5. Turn the dough onto a floured surface and knead lightly for about 1 minute.
  6. Shape the dough into a round loaf and place it on a baking tray lined with parchment paper.
  7. Using a sharp knife, cut a deep cross on the top of the loaf. This helps the bread cook evenly and is a traditional feature of Irish soda bread.
  8. Bake in the preheated oven for 35-45 minutes, or until the bread is golden brown and sounds hollow when tapped on the base.
  9. Remove from the oven and cool on a wire rack.
