Paul visited an Irish chef and author, Clodagh McKenna, who schooled him on the history and art of soda bread making. He learned that traditional recipes call for simple ingredients like flour, baking soda, salt and buttermilk. The dough is kneaded lightly, formed into a round loaf, and cut into four segments. Clodagh showed Paul how to brush the top of the loaf with buttermilk before baking, which gives it an attractive sheen and results in a moist interior full of flavor.
In addition to learning about soda bread, Paul also visited a potato fanatic who cooked traditional Irish varieties. He was amazed by the variety of potatoes available in Ireland, from old favorites like Colcannon to newer breeds such as Rocket and Rooster. Paul also sampled some unique pastries created by the head baker at the Merrion Hotel in Dublin. His experience in Ireland revealed to him an abundance of flavors, one that truly captures a taste of Irish culture.
