It was created by Stuart McNamara, a writer and editor from West Cork in Ireland, to bring recognition and appreciation for this beloved whiskey type. The history of Irish whiskey goes back more than 800 years, when it first emerged in Ireland. It was the Irish monks who learned the method of distilling spirits from other countries in Europe and used it to create edible spirits.

Irish whiskey is traditionally made in a pot still and was popularised across Europe in the 12th century. Sir Thomas Phillips’ Bushmill in Antrim, which many say is the oldest distillery in the world, received a licence to distil whiskey from King James in 1608. In 1757, it became the first licensed distillery to trade in Ireland and was allowed to add potato, sugar and grain into the production of Irish whiskey two years later. During the 1800s, Ireland became known as the whiskey capital of the world with famous brands like Tullamore Dew being established in 1829 by John Jameson.
