
Chris’s Irish Christmas Cake – The Irish Baker Abroad

Recipe
Day 1
800g of mixed dried fruit
200g glacé cherries
50g mixed peel
100g of slivered or chopped almonds
Zest & Juice of 1 lemon
Zest & Juice of 1 orange
1tsp of cinnamon
1tsp of nutmeg
1tsp of ginger
1tsp of mixed spice
150ml of whiskey
150ml of Guinness
Day 2
4 large eggs
200g of butter
200g of dark brown sugar
100g of Almond flour
240g of Plain flour
I used Sultanas and Raisins for this. You could also add currants or prunes. Whatever you like.
Method
Mix all the ingredients for day 1 in a large bowl. On day 2 start off by preparing your cake tin. The tin I used was 20cm | 8 inches in diameter and 10cm in height. Grease the tin then line it with greaseproof paper double the height of the tin. Check out the video for more about lining the tin.
Preheat the oven to 150C | 302F. If using a fan oven set it to 130C | 266F
Using a mixer whisk the butter and sugar for about 5 minutes on a medium speed. Scrape down the sides of the bowl. Add the eggs gradually followed by the plain and almond flour. Mix until nicely incorporated then add to the mixture from day 1. Combine well then fill your tin
Bake for approximately 3h and 40 minutes. If you’re unsure of when it’s fully baked use a thermometer. Insert it in to the center of the cake. It should be around 96-98C | 204-208F
To store the cake wrap it in two sheets of greaseproof paper followed by tinfoil then place it in an airtight container. It should keep for about 2-3 months in a cool dry place
You can also refrigerate it for up to 6 months or freeze it.
I’m going to feed it more whiskey every fortnight until we reach Christmas. About 1-2 tbsps
4 feeds should be sufficient folks!

2/3 cup of whiskey
2/3 cup of Guinness
Day 2
4 large eggs
1 3/4 stick of butter
1 cup of soft brown sugar
1 cup of Almond flour
2 cups of Plain flour
